Feta, Arugula, Orange and Red Onion Salad

Directions:

Mix together Olive oil, lemon juice & sugar together. Drizzle the arugula with half of the dressing; toss to coat and divide into 4 plates. Arrange the orange segments and onions and feta on top, dividing evenly. Drizzle with remaining dressing  season with salt & black pepper.

Ingredients:

  • 2 bunches arugula, washed and trimmed
  • 1/2 cup of feta cheese
  • 2 tablespoon extra virgin olive oil
  • Pinch of sugar
  • 2 teaspoon fresh lemon juice
  • 2 large navel oranges, peel and white pith removed, cut into segments
  • 8 very thin slices red onion, separated into rings
  • Freshly ground black pepper to taste
  • Kosher salt taste
