Ingredients:
- 12 regular size drumsticks
- 1 tablespoon curry powder
- Salt & pepper to taste
- 1 teaspoon brown sugar
- 1/2 teaspoon mustard powder
- 1 tablespoon chopped parsley
- 1 teaspoon thyme
- 1 tablespoon soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic crushed
- 1 teaspoons smoked paprika
- 1 teaspoon onion powder
Directions:
1. Grab the thin end of the drumstick firmly, then carefully cut through the meat surrounding the bone, using a sawing motion and turning the thing around. Once the skin is cut all around, use your knife to scrape down the meat from the bone. You may need to cut through a couple of sinews. Push the meat down to the other end. You should now have what looks like a handle with a ball of chicken meat at one end.
2. For marinade… combine all the ingredients in a small bowl and whisk together.
3. Pour the marinade all over chicken lollipops & rub marinade into the lollipops. Now cover with plastic wrap and place in the fridge to marinate for at least 1 hour.
4. Now off of a medium high grill or grill skillet indoors. Cook lollipops for about 15-20 minutes rotating to give them a nice char. Then place them in a 350 degree preheated oven for about 10-12 minutes additional minutes.
5. I don't really recommend any type of sauce on these chicken curry lollipops. They have such a great flavor already. But you can use your own favorite dipping sauce on the side to compliment the chicken lollipops. I really hope that you enjoy them. I know that I do.
